Tips for going uphill?

Hi all, I went cycling for the first time in a few months yesterday and found it exhausting. I'm not too fit (but i'm not awfully unfit. I can handle flat surfaces just fine, but my god.. Going up any kind of uphill, even if it wasn't too steep just destroyed me. An hour into my cycling and I was destroyed. My fiancé told me that changing gears is supposed to help but as a newbie I'm not sure how it works. *I'm on a mountain bike and typically ride on a mix of path/roads. I don't tend to go on dirt/trails/etc. Should I think about purchasing a different kind of bicycle or is a mountain bike right for me? I've heard hybrids could be what I'm looking for...
